Bon Appetit’s Pork Ragu Over Creamy Polenta

I have set out to expand my culinary experience and knowledge this year and my subscription to Bon Appetit is helping me fuflfill this task.

Rich is the meat man in the family. Not me. I was a vegetarian for 16 years before going gluten free so my confidence level cooking meat is not as high as say a someone who has been cooking, grilling, braising,curing and butchering meat for much of their life: i.e., Rich.

I must say, my level of confidence and my actual skill are not on the same page but for some reason the belief that I am not a good meat cook seems to take prominence in my mind. For this recipe, I was hoping to help my stubborn mind change and believe I was indeed confident and capable when it came to preparing meat. For the Pork Ragu, the recipe tasked me with cutting the pork shoulder, searing the pork shoulder and finally, braising the pork shoulder. Not a difficult set of tasks but being one that lacks meat confidence, I was not sure I could pull it off without help from my “meat man”.

Thankfully, I was wrong. Dead wrong. I usually don’t like being wrong, but in this case I embraced that wrongness with all my heart. So now, maybe I may start calling myself “meat girl”, or not!

The ragu was rich and flavorful and the pork was fork tender. I could taste all the ingredients: the wine added a nice depth and the fresh herbs made the sauce fragrant. The entire recipe is inherently gluten free so I did not to substitute any ingredients. The creamy polenta, however, has dairy ingredients so I had to substitute.

I can tolerate goat and sheep cheeses so I used Pecorino Romano, (a hard salty cheese made from sheep’s milk), in place of the Parmesan. If you cannot eat ANY dairy, I would replace the Parmesan with Nutritional Yeast Flakes. It will add a nutty and cheese flavor the polenta needs. I substituted the only other dairy ingredient, butter, with Earth Balance Buttery Spread.
